Best and super easy Strawberry Vinaigrette

I can’t wait for strawberries to be on sale again. Strawberries are one of those food items that can get quite expensive in the winter months. The good thing is that when the warmer weather starts to kick in, they go on sale and I am all over them again. That is simply a cycle of life,  sometimes we are up and sometimes we are down. There is nothing we can do to avoid certain negative things that can come our way. But what we can do, is to live a grateful life, be immensely thankful for the good days, look up, smile and soak positive energy as we feel high up there. This will give us the courage to go through the bad days and chances are, we will more likely recall a positive moment from our memory bank even in the midst of chaos. If something brings me down, I say to myself: remember, you’ve been happy before and you will be again.

Same thing applies to these strawberries that I long for. They were on sale once and they will be on sale again. And oohhh the things I will do with them. I plan on eating these babies almost daily during the summer months and I will also make sure to freeze a big bag so I can keep them on hand even during the next winter. In the mean time I still enjoy buying them when I can and a new favorite recipe is making fresh homemade strawberry vinaigrette.

Best and super easy Strawberry Vinaigrette

Strawberry Vinaigrette
yields 1 cup
  • 10 medium strawberries
  • 3 tablespoons orange juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • a dash of salt and pepper (to taste)
  1. Blend all of the ingredients together until smooth.
  2. Put the mixture through a mesh strainer to discard any solids and obtain a more silky vinaigrette.
