There are things in life that are easier than one think, especially in the kitchen. Lately I’ve learned so many cooking hacks and I’ve been meaning to share them with you. For example, did you know that after boiling an egg all you need to do is smack it around a glass or metal container lightly for a few seconds and just by doing so the shell will come right off? Is life changing! Maybe a video will be better for me to explain, but I hope you get the idea.
One more cooking AHA! moment I recently had, was finding out that granola can be done at home in no time and with just a few ingredients. Guys, it is so, so easy. Once you get the hang of it thee will be no need for a recipe, just mix your favorite ingredients, bake them and you will have homemade granola for days.
For this granola I used coconut and almonds as the main accompanying ingredients to the oatmeal. I used coconut oil for a better fat option and added flavor. Oh, and I used golden raisins too. For a touch of sweetness you’ll want to use a liquid sweetener. I used Lil’ SHUGA! which is also one of those things in life that once you discover them you can’t believe you lived without it. Lil’ SHUGA! is my favorite trick on this recipe!.
Why do I love it? Well it’s an organic, all natural, non-GMO sugar cane sweetener with just a touch of stevia. I get the great taste of sugar that I am used to but I can cut down the calorie consumption by ½ as the stevia makes it twice as sweet meaning I only need ½ as much. I love that is a balance of what my body craves and what is good for me. Hence their motto: Life a Balanced Sweet Life… That’s what I strive for and I think is fantastic that a brand promotes this message and carries it through their product. I totally recommend it. See how I used it to make the granola.
To make it, combine the oats with coconut flakes, almonds and raisins. Sprinkle some cinnamon and salt. Mix coconut oil and Lil’ SHUGA! drizzle and cover the rest of the ingredients with the SHUGA! and oil mixture. Bake in the oven and granola will be ready.
- 3 cups old fashion oats
- 1 cup unsweetened coconut flakes
- 1 cup slivered almonds
- ½ cup golden raisins
- 1 teaspoon ground cinnamon
- ⅛ teaspoon salt
- ⅓ cup coconut oil
- ¼ cup Lil’ SHUGA!
- Preheat oven at 350 F.
- In a large baking sheet combine oats, coconut flakes, almonds and raisins.
- Sprinkle with cinnamon and salt and toss around.
- Mix coconut oil and Lil SHUGA! until well combined.
- Drizzle oil and SHUGA! mixture on top of the rest of the ingredients and massage with your hands until everything is coated.
- Evenly lay the oats mixture on the baking sheet and bake for 10 minutes, toss the oats to avoid getting it burn and bake for 15 more minutes.
- Remove from the oven and let it cool.
