Summer entertaining is around the corner. For me everything kicks off with Memorial Day weekend. It’s that holiday of the year that says pools are open, grass is green, days are sunny, and weekends are fun and full of activities. When planning a get together at home or even when bringing a dish to a party, I like to make recipes that are easy to make and carry. Dips and one-pot dishes are great for this. But I make sure any dish I prepare has a twist that makes it unique and the hit of the party. Today I am giving a Latin twist to the popular spinach dip. I am doing this by adding chorizo, which gives it a smoky flavorful touch.
Mmmmm…. This dip is amazing. Even the pot knows it. Isn’t this pot fun? I got it a Big Lots, which is where I buy most of my props for styling all the food you see here on the blog. Big Lots have been my secret for years. I always find interesting items and most times I end-up getting more than I planned for because I am always surprised by all the things they carry.
Look at my other finds during my last a Big Lots trip. I make Big Lots my first stop when going out to shop for things I need, because chances are I’ll end up finding everything there. For example on this run all I had in mind to get was a new pot for my Fresh Spinach and Chorizo Dip, and possibly one or two new props. But I was surprised to also find the exact crackers I wanted to go along with the dip itself. And of course a few more things were added to my shopping-cart. I gotta say the variety of Big Lots it’s impressive. I am actually for sure going back soon for some patio furniture I could not take my eyes off.
Going back to the dip recipe, I bet you will love it. I am using fresh spinach instead of the soggy frozen type, also a mix of sharp cheddar and cream cheese, and of course chopped chorizo. I finally seasoned it all with garlic, salt and pepper.
Place all the ingredients in the oven, and the dip will be ready in no time. Serve it with a variety of crackers, breads, and veggies. Enjoy!
- 8 ounces cream cheese, room temperature
- 1 cup sharp cheddar cheese, grated
- ¼ cup mayonnaise
- 1 garlic clove, thinly grated
- 1 ½ cups fresh spinach, roughly chopped
- 1 cup chorizo, chopped
- A pinch of salt and pepper to taste
- Preheat oven to 350 F
- Mix all the ingredients on a oven safe dish
- Bake it for 30 minutes until all the ingredients have melted together and the top looks bubble and golden brown.
- Serve it warm or at room temperature with a variety of crackers, breads, and veggies
