I have to admit it. Oatmeal not my thing when I was growing up, and still not my thing all on its own. I love me some yummy oatmeal if is full of nuts, dried fruits, drizzled with maple syrup… you get the idea right? Those are the traditional combinations that one can think of, but recently my daughter said she wanted rainbows for breakfast and i was like: excuse me? rainbows? I told her we did not have such rare item on our house breakfast menu and I could not help to laugh a little (bad mami). She then insisted saying: si mami, I want rainbows for breakfast as she pointed to the Fruity Pebbles box on top of the fridge. Ohhh I see. Of course, of course!
I was about to pour a bowl and milk to serve her cereal and then I quickly remembered this super easy baked oatmeal recipe that I was pretty sure would taste and look like rainbows to my daughter thanks to the help of Fruity Pebbles. I love how Fruity Pebbles was part of her creative process. I truly believe that starting the day with a fresh and bright breakfast like this recipe fosters happiness and a great start for the day.
This recipe calls for just a few ingredients that you will simply mix them all at once and to the oven the go.
The result is a light and fluffy, almost cake like oatmeal. It is my favorite way to enjoy oatmeal and I am making it again tomorrow for sure.
- 2 cups rolled oats
- 1 cup Fruity Pebbles Cereal
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- ½ cup applesauce
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup milk
- Preheat the oven to 350 F
- Mix all of the ingredients and reserve ½ cup of the Fruity Pebbles cereal to sprinkle at the end.
- Pour oatmeal mixture into four greased ramekin dishes
- Top each ramekin with extra Fruity Pebble cereal
- Bake for 20-25 minutes, or until the center has set and the top is crispy
