This recipe is for those apple pie lovers like me that love to eat them pies but can’t stand the thought of baking If you are looking for instant gratification this recipe is for you.
I came up with this recipe not just because I dread to bake but also cause I had a party this weekend and wanted to serve something sweet that could be made in no time.Not only this recipe can be made ahead of time it also requires very little prep as for the filling I used a bag of Dole’s frozen Cinnamon Apple Slices from their Fruit n’ Spice line. No need to peel a bunch of apples and they already came with the right hint of cinnamon plus a subtle warm touch of red pepper. Genius! and so perfect for my empanada filling.
To make them all I did was chop the apple slices, add a little bit of brown sugar and cornstarch to help form that juicy apple pie filling, and filled the pre-made empanada discs in a breeze. If you rather make your own empanada dough, I have the best recipe here.
Once all my empanadas were ready I kept them in the fridge until the next day to fry them for the party. You could bake them too if you prefer.
During the party I cut the empanadas in half that way my guests could choose how much to have, I sprinkled them with powdered sugar, and had vanilla ice cream and dulce de leche for those that wanted to enjoy the empanadas a la mode.
Everyone asked me how I made them and I had them try the filling by its own as the Dole apple slices are so good on its own. I also had their Honey Lime Pineapple chunks and we all snacked on those too.
My guests raved about how good and fresh the fruit was and just in case you are wondering like they were, I got this Dole Fruit n’ Spice line in the frozen fruit section at Wegmans Food Markets.
I love how versatile this fruit spiced fruit can be. They work so well in sweet or savory recipes and their warm blend of spices even my 10 month old loves. Below you can see how I used the Honey Lime Pineapple chunks in a shrimp dish that was soooo sooo good. Just tossed the shrimp with the pineapple and your favorite seasoning, a splash or lime and you will be good to go.

- 1 (14 oz) package Dole Fruit n' Spice Cinnamon Apple Slices
- 2 tablespoons brown sugar
- 1 tablespoon corn starch
- 1 package (10 count) frozen empanada discs, thawed. Or search empanada dough recipe on this blog.
- Vanilla ice cream
- Cut empanada slices into small cubes.
- Place in a bowl and toss with brown sugar and corn starch.
- Take each empanada disc and add in the center, a heaping tablespoon of the apple mixture.
- Fold the empanada disc in half and seal the sides with a fork.
- Fry the empanadas on very hot oil, until golden brown and cooked trough. About 1-2 minutes on each side.
- Serve with a scoop of ice cream.
