Mexican Cauliflower Rice
Yield: 4 cups
  • 1 large head cauliflower
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small jalapeño, small diced
  • 1 can black beans, rinsed
  • ½ (1 oz) package Old El Paso™ taco seasoning mix
  • 1 handful cilantro, rough chopped
  • Juice of ½ lime
  • Salt to taste
  1. Remove the stem of the cauliflower and cut into small florets.
  2. Place the cauliflower florets in a food processor and pulse in batches until the cauliflower is the size of rice grains. Set aside.
  3. Add olive oil to a large pan over medium heat, stir the garlic until fragrant for about 1 minute or less, add the jalapeño, beans and Old El Paso™ taco seasoning mix.
  4. Add cauliflower and keep mixing until it’s all well coated.
  5. Bring the heat to medium low and cover. Let it cook for about 10 minutes
  6. Uncover and taste the cauliflower to test its doneness and taste. Adjust salt level to taste and remove from pan once the texture is to you liking.
  7. Before serving toss in the cilantro and lime juice.
